Chicken and Spinach Masala is a quick Indian dish made with a warm blend of spices. Great and Very Nice elegant recipe for elegant people

vegetable oil 2 tablespoons
on ¡on I, thinly sliced
garlic cloves 2, crushed
green chile pepper I, deseeded and
fresh root ginger I teaspoon, finely grated
ground coriander I teaspoon
ground cumin I teaspoon
canned tomatoes 200 g (7 oz)
boneless, skinless chicken thighs 750 g
(1/2 Ib), cut into chunks
crème fraîche 200 ml (7 fi oz)
spinach 300 g ( 1 1/2 cups), roughly chopped
chopped cilantro 2 tablespoons
salt and pepper
Heat the oil in a saucepan and cook the onion, garlic, chile pepper and ginger for 2—3 minutes.
Stir in the coriander and cumin and cook for I minute.
Add the tomatoes with their juices and cook gently for 3 minutes. Increase the heat, add the chicken and cook, stirring, until the outside is sealed.
Stir in the crème fraîche and spinach, cover and cook gently for 6—8 minutes, stirring occasionally. Add the cilantro, salt and pepper.
Serve with naan bread or rice and a salad.
